Simple and easy appetizers for you and a special somebody or any other time of the year!

You will want to keep these on standby. They are quick, easy to prepare and relatively low cost and full of flavor.

I found myself with a huge pack of mushrooms and decided I didn't want to make a "dish" and decided perfect bite size appetizer for cocktails, pre dinner or part of Hors D'oeuvres party.

It was time to come up with a recipe... as we say GoodBYE 2020. Hello 2021.

It was TIME to come up with a recipe for New Years Eve.

I went to a few of my favorite resources and ended up combining recipes to accommodate ingredients I had on hand. You could definitely switch the goat cheese out for all parmesan or feta. The pine nuts would be fine switched out to walnuts with either cheese.

I was talking to a friend and asking what she thought I should make and she said

"you have to make it easy. Most people don't cook like you."

When I said " well I'm already making spinach artichoke dip, but everyone knows how to do that." Her reply was..."NO they don't! Wake up, people don't sit in the kitchen all day...I don't know what in the world to buy for something like that.:)"

So I feel I should be more original but let's just start with the basics...

Spinach Artichoke Dip.

I serve this in two ways. I will either bak it in a casserole dish and serve with crackers or chips for dipping or for a bite size hors d'oeuvres I will scoop the dip into remade filo shells. Bake and serve. You can find filo shells fun any grocery freezer section. It's sort of an easy alternative for Spinach Spanakopita. The recipe below makes enough for at least 3 boxes of shells, or one large casserole size dish. The filling definitely will stay in the fridge for a few days, but don't fill the shells until the day you want to serve. The shells might become soggy with uncooked dip for a long period of time.
