This Mother's Day I will be spending it in sunny LA with one of my daughter's. That will be one gift. Being on 2 different coast, it is hard to make it work for all of us in the same city. I'll celebrate with one daughter in LA on Sunday, but missing the other daughter will be ok as she is not going to be with us as she prepares to move back to New York from another west coast city. That's my other gift!!!
I made a lunch for a friend the other day that I think would be a fantastic brunch/lunch dish for Mother's day next week. Take a look at this pretty table and yummy lunch.
Mother's Day in the New York area always seems like the official start of all the flowers popping outside and the peonies are in full bloom. My favorite!
I mixed pink and purple using old and new tabletop items.
The lilac in my kitchen set the tone for my tablescape!
I wanted to make a light but easy lunch.
A simple crabmeat salad over greens did the trick.
Just a few ingredients and no cooking time.
The recipe is quite simple. Fresh crabmeat needs very little attention - if you buy jumbo lump there are barely any bones or shells and cleaning is very simple. Only a few ingredients later and a yummy salad is ready. Check out this easy recipe.
1 pound jumbo lump crabmeat, picked over to remove any shell or cartilage
2 stalk celery, peeled, and cut small ( I like to slice thin on the diagonal
4 teaspoons finely sliced fresh chives ( 2 for the salad and 2 for garnish)
1/3 cup prepared mayonnaise ( I like good old fashion Hellman's)
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon Dijon mustard
1 tsp cognac ( the hidden ingredient:))
1/2tsp paprika and sprinkled a little extra on top for garnish
Kosher salt and freshly ground pepper
Simply toss all the ingredients together.
Serving suggestions: Toasted hot dog rolls or Boston or radicchio lettuce leaves
In planning my table I used some very OLD dishes and some BRAND new napkins! These "pink bow" dishes from Vista Alegre were my very first set of dishes ever. I suppose as a 21 year old girl they made sense. I don't often use them for dinner these days but they are perfect for a girls lunch and I still love them!
I paired them with these beautiful Kim Seybert napkins. Soft and pretty.
I wanted a little touch of gold so I just bought some simple place cards and did the handwriting myself. If I was having a bigger crowd I would have asked one of the amazing calligraphers I use often at Carolyn Bender Events. Ashley Gunsteen from Gunsteens Lettering made me some beautiful items that I'll be showing you next week. ( just wait!:)) This all looked so pretty on top of the gold chroma placemats from Red Bliss Design.
My Vista Alegre dishes are no longer available, and I have loved them for many years. I am yearning for a new set and I love both of these patterns from Vista Alegre that are available at Alchemy Fine Home.

They also have this fantastic and fun set with a melange of butterflies. Also by Vista Alegre. So colorful and fun for any time of day. I could see these used in an outdoor al fresco, summer look or dressed up at night with a bit black accent to create a sexier, edgier look. Things have been a bit busy lately!@##*# and I didn't really have time to cook much for this lunch. I had to think creatively to make it feel "homemade" and fresh without cooking.
I simply bought cooked beets in a take out place I like very much near my home. I crumbed gorgonzola cheese ( or you can certainly use blue cheese or goat cheese).
I put a few tiny little orange segments on top. I added a touch of lemon juice to nonfat plain yogurt and spread it as a base on the bottom of the plate and drizzled a store bought lemon dressing on top.
Voila!! Beet salad with gorgonzola cheese.
Ideally I would sprinkle a sweet walnut on top, but my assistant is very allergic.
So we couldn't show it to you in the photos!!
I like theTrader Joes sweet nuts and they are a very good price too.
I always seem to have leftover fruit...and it always seems to make it's way into pound cake. Lemon Blueberry was a nice way to end lunch.
